Interestingly, I learned that if you want a white unicorn, it is harder to find and much more expensive than any other fur color.

When I first heard this in the episode, I was baffled and wondered if I’d heard that right. I used to be a bartender and had made plenty of fruity cocktails and some chocolatey ones, but I’d never heard of combining apricot and Toblerone into one drink. It sounded like something someone creates on the special menu primarily to get rid of a liqueur that isn’t selling well. Nevertheless, I was curious.
I looked high and low for an Apricot Toblerone Cocktail recipe. I found plenty of apricot cocktails and Toblerone cocktails, but never one combined the two tastes. I was disappointed I couldn’t find one. Since I can’t leave you without a workaround, here is my favorite of the Toblerone drinks I found. If you are brave, you can add a splash of apricot liqueur to achieve the elusive Apricot Toblerone Cocktail mentioned in Letterkenny.
Sparkling Mango Sorbet Float
Of all of the drinks that Katy mentions, this is by far my favorite. You can find the recipe here. Not only is it an excellent combination of flavors, but I also love that it can be made either alcoholic or non-alcoholic. As a pregnant woman, I am always looking for fun mocktail recipes.
Keg
A party standard! You can get a keg of any beer you like and still be on theme. If you want to take it a step further, try making the beer a pink hue. I immediately think of a raspberry hefeweizen or dying a light beer with food coloring (think St. Patty’s day in Boston with green beer just with pink dye). If you decide to go the pink beer route, wear gloves when adding the food coloring. My hands were green for weeks after working a St Patrick’s Day celebration, even after wearing gloves!
